Fluffy Pumpkin Cookies


This is my favorite thing to make for Halloween, and throughout the holidays. They are very easy and oh so yummy! I created this recipe combining some of my favorite ingredients. They are always a hit at a party, and never last more than 2 days at home. I usually make one batch with chocolate chips for those chocolate lovers, and one batch without, for the "weirdos" like me who aren't too big on chocolate. I call them “Fluffy Pumpkin Cookies” because they are so light and fluffy, you can almost call them mini cakes!




Ingredients
1 cup pumpkin puree
1 cup brown sugar, packed
1/2 cup vegetable oil
1 egg
1 ½ cups flour
½ cup pumpkin flour*
2 tsps baking powder
2 tsps cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/8 tsp ground ginger
1/2 tsp salt
1 tsp baking soda
1 tsp milk
1 Tbsp vanilla extract
If you like chocolate, feel free to add some chocolate chips to the batter!
Red food coloring to make it look more festive! (optional)
*If you do not have pumpkin flour, just use 2 cups regular flour.

Directions
Pre-heat oven to 350 degrees F.
Combine pumpkin, sugar, vegetable oil and egg. In a separate bowl, mix together flour(s), baking powder, salt and spices. Dissolve the baking soda in the milk and mix into dry ingredients.
Gradually add the dry mixture into the pumpkin mixture, stirring constantly. Add the vanilla. Add a few drops of red food coloring. If using chocolate chips, add them now.
Drop tablespoon sized globs onto a greased cookie sheet. Bake for about 7-8 minutes.
