Spinach, Cheese and Artichoke Bites

These little mini quiches are easy to make, and are a wonderful appetizer for any get together. You can use Pillsbury Crescents and just roll the dough a bit to seal the perforations, but you can also use your own homemade dough if you wish.

Ingredients

2 cans Pillsbury Crescent Rolls
8 slices bacon, cooked and chopped
4-6 cups fresh spinach, blanched, drained and chopped
1 can artichokes hearts, chopped
2 minced garlic cloves
1/2-3/4 cup mayonnaise
3/4 cup grated Parmesan cheese

Directions

Preheat oven to 375 degrees F.

Unroll your dough and seal the perforations if using Pillsbury Crescent Rolls. Cut dough into little squaresz, about 2 inches. Put one square in each well of a mini muffin pan, making sure to press dough up on the sides.

Mix all of your ingredients in a bowl, and drop about a tablespoon of the mixture into each cup. Bake for about 12-15 minutes, or until golden brown. Serve warm.
