Roasted Beets and Goat Cheese

This recipe is so yummy! It has two of my favorite things; beets and goat cheese. If you aren't a fan of the strong flavor of goat cheese, try feta!

Ingredients:

4 beets washed, peeled and chopped
1 1/2 tablespoons minced fresh parsley
1/2 tablespoon
2 1/2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste
1/4 cup crumbled goat cheese
*This will make about 4 servings*

In a bowl, cover your chopped beets with 1/2 tablespoon of your olive oil and toss to evenly coat all pieces. Spread on a baking sheet and bake for about 45 minutes, or until tender. While the beets are roasting, whisk together the remaining olive oil, balsamic vinegar, salt and pepper and parsley. When the beets are done, place on a serving dish, or into a bowl and pour the dressing over them. Top with the goat cheese and enjoy!
